Ingredients

This moist, delicious zucchini cake recipe is perfect for the spring and summer months. You'll need the following ingredients: 2 cups of all-purpose flour, 1/2 cup of sugar, 1 teaspoon of baking soda, 1/2 teaspoon of baking powder, 1/2 teaspoon of salt, 1/2 teaspoon of ground cinnamon, 3 eggs, 1/2 cup of vegetable oil, 1 teaspoon of vanilla extract, 2 cups of grated zucchini, 1/2 cup of chopped walnuts, and 1/2 cup of raisins.

Instructions

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan. In a large bowl, stir together the flour, sugar, baking soda, baking powder, salt, and cinnamon. Make a well in the center and add the eggs, oil, and vanilla extract. Beat until smooth. Fold in the zucchini, walnuts, and raisins. Spread evenly into the prepared pan.

Bake

Bake at 350 degrees F (175 degrees C) for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool before cutting into squares.
