Ingredients

This sonic birthday cake recipe calls for a few common ingredients that should already be in your kitchen. You will need: 3 cups all-purpose flour, 2 1/2 cups granulated sugar, 1 teaspoon baking soda, 1 teaspoon baking powder, 2 teaspoons ground cinnamon, 1/2 teaspoon salt, 1 cup vegetable oil, 2 large eggs, 1 teaspoon vanilla extract, and 1 1/2 cups Greek yogurt.

Instructions

Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan. In a medium bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, and salt. In a separate bowl, whisk together the oil, eggs, vanilla, and yogurt. Pour the wet ingredients into the dry ingredients and mix until just combined.

Assembling the Cake

Divide the batter between the cake pans and bake for 30 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool for 10 minutes in the pans before transferring to a wire rack to cool completely. Place one of the cakes onto a cake stand or plate. Spread about 1/4 cup of frosting on top of the cake, then place the other cake on top.

Frosting

To make the frosting, beat together the butter, cream cheese, and vanilla until light and fluffy. Gradually add the powdered sugar and mix until combined. Add the food coloring and mix until the desired color is reached. Frost the sides and top of the cake with the frosting.

Garnish

To garnish the cake, make some Sonic themed decorations. Use melted white chocolate or fondant to make Sonic’s shoes and eyes. Cut blue and yellow pieces of fondant to make Sonic’s gloves and ears. Place the decorations on the top of the cake and serve.
