Ingredients

To make a delicious Victoria sponge cake, you will need the following ingredients:

  • 225g of plain flour
  • 225g of butter
  • 225g of caster sugar
  • 4 medium eggs
  • 2 teaspoons of baking powder
  • 2 teaspoons of vanilla extract

Instructions

Here are the instructions to make a delicious Victoria sponge cake:

  1. Preheat the oven to 180°C (160°C fan) and grease two 20cm sandwich tins.
  2. Cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, adding a spoonful of the flour with each egg.
  4. Stir in the remaining flour, baking powder and vanilla extract.
  5. Divide the mixture between the tins and bake in the oven for 25-30 minutes until golden brown.
  6. Leave to cool in the tins before turning out onto a wire rack.

Serving Suggestions

Once your cake is cooled, you can serve it with a dollop of fresh cream, a spoonful of jam, and a dusting of icing sugar. Enjoy!
