Christmas Cake

Ingredients

You will need the following ingredients to make this delicious Christmas cake: 200g of butter, 200g of caster sugar, 200g of self-raising flour, 4 eggs, 2 teaspoons of baking powder, 1 teaspoon of cinnamon and 2 teaspoons of mixed spice, 1 teaspoon of vanilla extract, 500g of mixed dried fruit, 100g of glacé cherries, 50g of flaked almonds, and 4 tablespoons of brandy or sherry.

The Cake Tin

You will need to use a 20cm round cake tin, greased and lined with baking parchment.

Method

1. Preheat the oven to 150°C/Fan 130°C/Gas 2.

2. Place the butter, sugar, flour, eggs, baking powder, cinnamon, mixed spice and vanilla extract into a large bowl and beat until the mixture is light and creamy.

3. Add the mixed dried fruit, glacé cherries, flaked almonds and brandy or sherry and mix until everything is combined.

4. Spoon the mixture into the prepared cake tin and spread it evenly.

5. Bake in the preheated oven for 1 hour 20 minutes or until a skewer inserted into the centre comes out clean.

6. Leave the cake to cool in the tin for 10 minutes before turning it out onto a wire rack to cool completely.

Decoration

Once the cake has cooled, you can decorate it with icing sugar, glacé cherries, or a festive icing of your choice.
