Ingredients
You will need the following ingredients for this delicious pineapple upside down cake: 1/2 cup (115g) butter, 1/2 cup (110g) light brown sugar, 1 (20-ounce) can pineapple slices, 7 maraschino cherries, 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1 cup (125g) all-purpose flour, 1 teaspoon baking powder, 1/4 teaspoon baking soda, 1/2 teaspoon salt, 1/2 cup (110g) granulated white sugar, 1 large egg, 1/2 cup (120ml) buttermilk, 1 teaspoon vanilla extract.
Instructions
1. Preheat the oven to 350°F (175°C). Grease an 8-inch (20cm) round baking dish with butter.
2. In a small saucepan, melt the butter over medium heat. Once melted, remove from heat and stir in the light brown sugar. Pour the mixture into the prepared baking dish and spread evenly.
