- 1/2 cup butter, softened
- 2 large eggs

- 3 cups rhubarb, cut into 1-inch pieces

- 1/4 cup all-purpose flour
Instructions
1. Preheat your oven to 350 degrees F. Grease and flour an 8-inch square baking pan.
2. In a medium bowl, whisk the flour, baking powder, and salt.
3. In a large bowl, beat the 3/4 cup sugar and butter until light and fluffy. Beat in the eggs and vanilla.
4. Gradually add in the flour mixture, alternating with the milk, and beat until combined.
5. In a separate bowl, toss the rhubarb with the 1/4 cup sugar and 1/4 cup flour.
6. Spread half of the batter in the pan and top with the rhubarb mixture. Spread the remaining batter over the top.
7. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
