Ingredients
Start with these ingredients: 1 1/2 cups of granulated sugar, 1 cup of cake flour (not self-rising), 12 large egg whites, 1 1/2 teaspoon of cream of tartar, 1/4 teaspoon of salt, and 1 teaspoon of vanilla extract.
Preparing the Pan
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 10-inch tube pan with butter or vegetable oil.
Mixing the Batter
Sift the sugar and cake flour together, twice. In a separate bowl, beat the egg whites, cream of tartar, and salt until the mixture forms soft peaks. Slowly add the sugar, 1/4 cup at a time, while continuing to beat the egg whites. Once all the sugar has been added, add the vanilla extract.
Adding the Dry Ingredients
Gently fold in the flour and sugar mixture, 1/4 cup at a time, until the batter is smooth. Be sure not to over mix, or the cake will be dense.
Baking
Pour the batter into the prepared pan and bake for 35-40 minutes. The cake is done when the top is golden brown and a toothpick inserted into the center comes out clean.
Cooling and Serving
Allow the cake to cool in the pan for 15 minutes before inverting onto a plate or cooling rack. Serve with fresh fruit or whipped cream, or enjoy as is.
