Ingredients You Will Need

To make this delicious fruit cake, you will need the following ingredients: 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, 1/2 teaspoon of salt, 1/2 teaspoon of ground cinnamon, 1/2 cup of butter, 1 cup of white sugar, 2 eggs, 1 teaspoon of vanilla extract, 3/4 cup of sour cream, 1 cup of chopped dates, 1 cup of chopped dried apricots, 1 cup of chopped dried pineapple, 1/2 cup of chopped walnuts and 1/2 cup of chopped pecans.

Instructions For Preparing the Cake

Begin by preheating your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan. In a medium bowl, mix together the flour, baking powder, baking soda, salt and cinnamon. In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract and sour cream. Gradually stir the dry ingredients into the wet mixture, until blended. Fold in the dates, apricots, pineapple, walnuts and pecans. Pour the batter into the prepared pan.

Baking the Cake

Bake for 30 to 35 minutes in the preheated oven. When done, a toothpick inserted into the center should come out clean. Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely. Serve with whipped cream or your favorite ice cream.
