Gather Your Ingredients

This Italian cream cake is surprisingly easy to make and requires just few ingredients. You will need 1 stick of butter, 2 cups of all-purpose flour, 1 cup of granulated sugar, 1 teaspoon of baking soda, 1 cup of chopped pecans, 5 large eggs, 1 teaspoon of vanilla extract, 1 cup of coconut flakes, 1 (8-ounce) package of cream cheese and 1 (14-ounce) can of sweetened condensed milk.

Mix the Batter

To begin, cream the butter and sugar together in a large bowl until light and fluffy. In a separate bowl, combine the flour and baking soda. Add the dry ingredients to the butter-sugar mixture, and mix until just combined. Add the eggs one at a time, mixing until each one is fully incorporated. Stir in the vanilla, pecans and coconut flakes.

Bake the Cake

Pour the batter into a greased 9-inch springform pan. Bake at 350°F for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool completely before removing from the pan.

Make the Frosting

To make the frosting, combine the cream cheese and condensed milk in a bowl and beat until light and fluffy. Spread the frosting over the cooled cake.
